Origin & Processing Details
The picturesque region in Tamil Nadu, India, is where our exquisite coffee beans originate. Situated at an elevation of approximately 1,300 meters, the unique microclimate and rich volcanic soil provide the perfect conditions for cultivating exceptional coffee. Our beans are predominantly of the Arabica variety, known for their nuanced flavors and pleasant acidity.
The coffee cherries are carefully handpicked at their peak ripeness, ensuring optimal sweetness and flavor development. After harvest, the cherries undergo meticulous processing to unlock their hidden potential. Our preferred method is the wet-processing technique, which involves carefully removing the outer skin and pulp, followed by fermentation and thorough washing to eliminate any impurities.
Once the beans have been washed and cleaned, they are laid out on raised drying beds under the warm sun to naturally dry. This slow and controlled drying process allows the beans to retain their intrinsic characteristics and develop complex flavors. We take great care in monitoring the drying process to ensure consistent quality and optimal moisture content.
After reaching the desired moisture level, the beans are carefully stored in a cool and dry environment to stabilize their flavors. They are then expertly roasted in small batches to highlight their unique attributes. Our experienced roasters meticulously control the temperature and duration of the roasting process, crafting a profile that accentuates the inherent flavors and aromas of the coffee beans.
